Next in our series of festive eat up recipes is the fabulous, sweet and fiery Turkey, Butternut Squash and Butter Bean Chilli. Don't be put off by the length of the ingredients list - it's pretty simple to put together, most of the hard work is done by the oven - low and slow!! This is another recipe inspired by Jamie Oliver, that has been slightly tweaked over the years by Camping Scamping HQ.
As always with Camping Scamping, quantities are approximate - plenty of wriggle room depending on how hearty your appetites are! The amounts below make about 10 servings, which we pop into the freezer so we can enjoy this deliciousness through the year.
Ingredients:
Approx 1kg cooked turkey, cubed
Three tins of tinned tomatoes
Butternut squash, cubed
Two tins of butter beans
Two onions, chopped
Two peppers, chopped
Three carrots, peeled and cubed
Lots of garlic, crushed
Honey
Chilli powder
Cumin
Paprika
Olive oil
Salt and pepper to taste
Method:
We prefer the butternut squash to be roasted before being added to the chilli, so if you do too, add a small glug of olive oil to a baking tray, coat the butternut squash and roast for about 30 minutes.
Meanwhile, sauté the onion and garlic in paprika, cumin and chilli powder.
Add the peppers and carrots. Stir and cook for about 5-10 minutes.
Add the turkey, squeeze over a good skoosh of honey. Fry until the turkey begins to slightly caramelise.
Add the tomatoes, washing the tins with one tin of water.
Put in the oven / cook over your campfire on low for about 90 minutes. Keep checking the water levels and top up if needed.
Stir through the butternut squash and butter beans.
