Pineapple and Veggie Kebabs


Quick and easy is always the mantra of the first night camping meal with Camping Scamping! This one couldn't be better - whack the veg in a tupperware/food back with the marinade before you leave, put it in the ice box and by the time you have put up the tent the spices will have worked their magic and you are about 10 minutes away from a super tasty first night dinner! Keep reading for our Pineapple and Veggie Kebabs recipe.


As always, any amounts in all of our recipes are approximate - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot! Our first night dinner is often over the camping stove, but this time we had super dry wood and so had time to get a fire going and cook over the flames, which added an additional smokey layer. Honestly, grilled pineapple is next level!



Ingredients:

Marinade:

Olive oil

Garlic

Paprika

Dried Basil

Lemon Juice

Salt & Pepper


Kebabs:

Whatever you would like!! We went for:

Mushrooms, whole

Courgette, sliced

Red Pepper, cubed

Mini corn, whole

Fresh pineapple, cubed


Method:

  1. Place the vegetables into a resealable food bag and add the marinade ingredients, making sure they coat the vegetables and put into the ice box

  2. Keep the pineapple separate or it starts to disintegrate (and you might not have room for one massive bag, two smaller ones are easier to fit in the box!)

  3. Once your flames have died back, thread the vegetables and pineapple onto your skewers

  4. Place on the grill and keep turning until they start to brown and caramelise.



We served ours this time with pitta breads (which we toasted over the fire), tzatziki and some amazing Ainsley Harriot Mushroom Cous Cous we have found (plus a cheeky Morrison's chicken and chorizo kebab, as frankly what's the problem with pre-made??!).
