One Pot Camping Chicken Tikka Biryani

We were thinking "How can we cook delicious curry and rice when camping, but only in one skillet?" Cue lightbulb moment ...throw it all in together! Well, it works for paella, so why not curry? And lo, our One Pot Camping Chicken Tikka Biryani was born.


Amounts in all of our recipes are approximate (we are in a field after all!) - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!


Cook how suits you in the environment you are in - campfire, camping stove or oven. It will be delicious either way! We prefer the smokiness that open flames adds.


Lots of this one can be done in advance - especially marinating the chicken. Put the chicken, some oil and the spices in a ziplock bag at home and then pop it in your cool box. Chop the veggies into another and measure out your rice into a third. Simple!

Ingredients:

Three chicken breast, diced

Spices - ground coriander, turmeric, cumin, paprika, mild chilli powder, cinnamon, salt, black pepper

Garlic

Lemon juice

Onion, chopped

Pepper, chopped

Courgette, chopped

Two tins of chopped tomatoes

Easy cook rice

Water


Method:

  1. Marinate the chicken for at least two hours with the spices, garlic, lemon juice and a splash of oil

  2. Heat the skillet until the oil is just smoking and then add the onion, stirring and slowly sweating.

  3. Add the chicken and cook almost through.

  4. Next up the peppers and courgettes.

  5. Add the two tins of tomatoes and then fill with water, swill around to clean off the remaining juice and pour into the skillet

  6. Last up is the rice. Add enough for your requirements, stir and let it cook in the tomato juices. Should be around 10mins.


Perfect just as it is, but we can't resist a garlic and coriander naan on the side of our One Pot Camping Chicken Tikka Biryani.
