We usually avoid definitive amounts and cooking times, but for pastry cooking specifics are important. Feel free to size up or down depending on the size of your Dutch Oven (ours is 5.7l) and you can use any fruit really if you fancy exploring beyond berries!
Ingredients:
For the berries (you could prep this before your trip in a gripseal bag):
1 bag of frozen berries of your choice (we love Morrisons Frozen Wonky Berry Mix), defrosted
Sprinkle of ground cinnamon
Good 2-3 tbsp sugar
3-4 tbsp corn flour
Butter for the lining
For the top:
4tbsp butter, softened
3tbsp soft light brown sugar
1 cup plain flour
1 tsp baking powder
4 tbsp milk
Pinch salt
Method:
Line your Dutch oven and smear in butter.
Mix your berries, cinnamon, sugar and corn flour and then place into the liner.
Meanwhile in a separate bowl place the flour, soft light brown sugar, salt and baking powder and then rub in the butter.
Add the butter and rub into the fry indredients.
Add the milk and mix until it becomes a soft dough (add more milk if needed).
Dollop the dough onto the top of the berries, leaving gaps between.
Put on the lid and place above the fire. Take care to not burn the berries on the bottom.
Keep having a peak but it should take about 35-40 minutes.
Serve with custard or cream (or ice cream depending on your cool box). Deliciously tart and irresistible!
