One pot cooking at its most delicious best! All you need is a skillet, a handful of ingredients and a hearty appetite! This one is great for a first night dinner over the camping stove whilst you are getting the tent pitched and the fairy lights twinkling! Minimum effort, maximum taste - keep reading for the dead easy recipe for our Cheat's Camping Carbonara!
You know the drill now - no cooking times or amounts. We fully subscribe to the "each to their own" philosophy when it comes to appetites, fuel source, types of pans etc. Whatever you decide, however much you make, will be just perfect for you and yours!
Ingredients:
Pancetta
Onion, chopped
Garlic, crushed
Mushrooms, sliced
Tin of sweetcorn, drained
Bag of pasta - we went with fusillata casareccia this time, but honestly, just grab whatever you have in the cupboard!
Philadelphia Intense - we went with herbs de provence and added garlic, but their garlic and herbs one would be equally delicious - this is the "cheats" bit!
Parmesan for serving
Olive Oil
Method:
Saute the onions and garlic until soft in the olive oil.
Add the pancetta, cook until beginning to go crispy.
Add the mushrooms and stir until coated in the pancetta oil and starting to soften.
Next, add the pasta and stir.
Pour in boiling water until all of the pasta is covered and boil until the pasta is cooked. You might need to cover with a lid/foil to slow down the evaporation of the cooking water - you want it to evaporate, but not so quickly that the pasta doesn't cook through.
Once most of the cooking water has evaporated, add the Philadelphia Intense and stir through. Turn the heat right down (or move from the flames).
Add the sweetcorn, stir through and allow it to warm through. You could add this earlier, but we prefer the crunch of the sweetcorn rather than boiling it.
Serve with a green salad and sprinkle with grated parmesan and a crack of black pepper.
You may want to make more of our Cheat's Camping Carbonara than you think you will need, as it's guaranteed that the scamps big and small will want seconds!
